Method
  1. 1 Mix all spices with curd and lemon juice
  2. 2 Toss paneer, capsicum and onion in the marinade. Rest 5 min
  3. 3 Heat pan on HIGH — must be very hot before paneer goes in
  4. 4 Add oil then everything in one layer. Do not move for 2–3 min — let char marks form
  5. 5 Flip and cook 2 more min on high
  6. 6 Squeeze fresh lemon over before eating

♨️ Reheating: Best eaten fresh. If reheating: high heat pan 2 min, no water.

Note: The key is genuinely high heat. If the pan is not hot enough the paneer steams instead of charring.
